BBQ Chicken Pizza

Another one of my new favorite recipes from Core de Force, this is the easiest pizza ever, perfect for a Friday night, wont break the bank or your waistline! Best part, the kids will love it! Mine sure did. (My husband might not approve...but he makes pizza for a living...! ha!)

There are two steps to this so make sure you read through them all. The most time consuming is whipping up the BBQ sauce for the pizza; it makes about a cup so plan on having enough Pita's in the house to make it more than once, depending on how many you are feeding. I used Joseph's Whole Wheat Pita's, the only one I could find without added sugars or HFCS and all that crap.

BBQ Sauce:

Makes 12 servings, 2 TBS each

1/2 cup tomato paste, no added sugar
1/2 cup water
1/4 cup Worcesterhire suace
2 TBS Maple Syrup
2 TBS Apple Cidar Vinegar
1/4 tsp garlic powder
1/4 tsp onion powder ( I did not have this on hand--opps!)
1/4 tsp sea salt
1 tsp black pepper

1. Combine all ingredents in a medium mixing bowl; mix well.
2. use immediately or store in the fridge in airtight container
Portion Fix: 1/2 purple

My 21 month old couldn't wait to get his hands on it...

For the PIZZA part!
(Makes 1 serving)

1 61/2 inch whole wheat pita
2 TBS Maple BBQ Sauce (see above)
2 TBS shredded Mozz, I may have added like 3...
1/2 cup cooked chicken
2 TBS red onion or white, or if you don' like onions feel free to add what you do like!
1 TBS chopped fresh cilantro ( I did not use this either)

1. Preheat oven to 350F
2. Place pita on baking sheet, top with Maple BBQ Sauce, cheese, chicken and onion
3. Bake for 10-12 minutes or until cheese is melted.
4. Sprinkle with cilantro; serve immediately.

Portion Fix: 2 yellows, 1/2 red, 1/2 blue, 1/2 purple(from the sauce)
