Tacos for the Win!

OK I made these last night and they were just so darn good I couldn't not share!

And so easy to make! Warning It does look like a lot of steps but each step takes only a few minutes to do!

What you will need:

  •  1lbs of chicken breast (I used leftover chicken from the day before and just shredded it with a fork)
  • Taco seasoning
  • 1/3 cup of water
  • Large pieces of Romaine lettuce
If you are not using already cooked chicken, get your chicken cooking; once cooked add the water and taco seasoning as directed.
If you are using leftover chicken I put the stove on low/medium heat, add the chicken, the water and taco seasoning. Mix around until it is heated thoroughly and taco seasoning is all mixed in.


For the Sour Cream:

  • 1/2 cup Plain Greek Yogurt
  • Juice from 1/2 lemon
  • 1/8 teaspoon salt (to taste)
  • Dash of black pepper
Add yogurt, lemon, salt and pepper into a bowl, stir to combine all ingredients. Add lemon or salt to taste. 

Fresh Tomato Salsa

1 large/medium tomato diced
1/4 onion diced
1/2 juice fresh lime
1 tablespoon of vinegar
 small bunch of fresh cilantro

Put tomato, onion and cliantro in small bowl. Juice lemon over and add vinegar. Stir until all tomatoes and onions are covered.

There you have it! Put the chicken inside of a romaine lettuce leaf, add some fresh salsa, with a small dollop of the 'sour cream' and sprinkle with a small amount of chedder cheese if desired.

Who doesn't love Tacos?! Seriously!

I have them at least twice a week and its a great way to use up extra chicken!
